Tropical Textures & Vibrant Greens

The secret to a coastal menu that feels truly balanced is in the sides. You want dishes that feel light, look vibrant, and offer a refreshing counterpoint to your main course. This week, we are featuring two powerhouses that bring the sunshine to your plate: Pineapple Quinoa with Almonds and our Honey Garlic Ginger Glazed Green Beans.

The Tropical Grain: Pineapple Quinoa with Almonds

If you’re tired of the same old starch, this is your new best friend. We’ve elevated fluffy quinoa by tossing it with juicy pineapple tidbits and toasted sliced almonds. It’s a tropical palate cleanser that bridges the gap between the savory main and the fresh veggies.

  • The "Wow" Factor: It’s all about the crunch. The contrast between the soft quinoa and the toasted almonds makes every bite interesting, while the green onions add a necessary savory bite to the sweetness of the fruit.

  • Shopping Tip: For the best texture, use "Tri-color" or "White" quinoa. If you can’t find fresh pineapple that is perfectly ripe, high-quality canned pineapple tidbits (drained well) actually work beautifully here because they provide a consistent sweetness.

  • Prep-Ahead Strategy: Quinoa is even better when it has time to sit. Cook it a day ahead and store it in the fridge. On the day of your dinner, just toss in your fresh pineapple, almonds, and onions at room temperature.

The Garden Glow: Honey Garlic Ginger Glazed Green Beans

We are taking garden-fresh green beans and giving them a high-gloss, boutique-resort finish. This isn't a heavy casserole; it’s a bright, snappy vegetable dish with a glaze that tastes like pure sunshine.

  • The "Wow" Factor: That glaze! The honey provides a gorgeous shine, while the fresh ginger and garlic create an aroma that will have your guests wandering into the kitchen before dinner is even served.

  • Shopping Tip: Look for Haricots Verts (French green beans) if you want that elegant, thin look. They are more tender than standard string beans and cook in half the time.

  • Prep-Ahead Strategy: You can "blanch" your green beans (boil them for 2 minutes then plunge them into ice water) the morning of your party. This locks in that vibrant green color. When it’s time to eat, they only need a quick 3-minute toss in the pan with your pre-made glaze.

Master the Coastal Timing

Why juggle three pots at once when you could be enjoying the breeze? My May Monthly Digital Download includes my "Side-Dish Sync" guide, which tells you exactly when to start the glaze so everything hits the table hot and perfectly crisp.

Whether you’re serving these alongside our buttery halibut or as a standalone light lunch, these sides are the essence of May. They are bright, they are bold, and they bring a coastal energy to every forkful. Stay tuned for next week as we reveal the "steak of the sea"—our showstopping baked halibut.

I believe that every time we gather, we get a little closer to the people we were truly meant to be. I hope today's reflection inspires you to bring a little more beauty and intention to your own table.
