The Modular Menu: How to Scale Elegance for Any Occasion

We often overcomplicate "fine dining" at home. We think more courses equal more elegance, but true sophistication is actually found in the balance and the rhythm of the evening. After forty years of hosting, I’ve learned that the most memorable meals aren't necessarily the most complex—they are the most intentional.

The Modular Approach

In Guide 3: The Multi-Course Masterclass, I teach what I call the "Modular Menu." It’s a 4-part build: The Opening, The Main Event, The Refreshment, and The Finale.

The magic is that the opening (appetizer) and the finale (dessert) are "flex courses." If it’s a casual Tuesday night, skip them. If it’s a milestone anniversary, lean in. By mastering this structure, you ensure the heart of the meal—the protein, starch, and seasonal vegetable—remains the star, no matter the occasion.

The "Refreshment" Course

One of my favorite ways to elevate a table without the need of a bar is through signature infusions. A chilled bottle of Pellegrino, a splash of Monin syrup (like Lavender or Blackberry), and a few sprigs of fresh mint can be more memorable than a vintage wine. It’s about the color, the clarity, and the care.

Editorial Plating: Building Height

The final step in our foundation trilogy is moving away from the "flat" plate. I’ll show you how to layer your components—stacking your protein atop your starch and greens—to build height. This "Editorial" style uses negative space to draw the eye toward the artistry of the food, making your home-cooked meal look like it belongs in a high-end boutique.
