The Great Green Mix-Up: Scallions vs. Spring Onions vs. Chives

1. Scallions (The All-Rounders)

Also known as green onions, these are the workhorses of the kitchen. You can recognize them by their slim, straight white base that is barely wider than the green stalk.

  • Flavor Profile: Mild and fresh.

  • Best Use: Use the white parts for sautéing to build a flavor base, and save the hollow green tops for a fresh, crunchy garnish on tacos or baked potatoes.

2. Spring Onions (The Roasted Sweethearts)

Spring onions are often mistaken for scallions, but look at the bottom. They have a noticeably round bulb at the base. They are actually just young onions harvested early.

  • Flavor Profile: Sweeter and slightly more intense than a scallion.

  • Best Use: Because of that bulb, they are incredible when roasted whole or grilled. The sugars in the bulb caramelize beautifully, making them a perfect side dish rather than just a garnish.

3. Chives (The Delicate Herb)

Contrary to popular belief, chives aren't a vegetable—they are an herb. They are much thinner, solid (not hollow), and look like bright green blades of grass.

  • Flavor Profile: The mildest of the bunch with a delicate onion-garlic whisper.

  • Best Use: Treat them gently! High heat makes them bitter, so always use them raw or stir them in at the very last second. They are the "glamour shot" finish for eggs, dips, and creamy soups.

Pro-Tip: The Swap Rule

If a recipe calls for scallions and you only have spring onions, you can usually swap them—just be aware that the spring onion bulb will take a little longer to soften. However, never swap chives for spring onions in a stir-fry; the chives will disappear into bitter nothingness!
