Beef Tenderloin with Merlot-Lingonberry Sauce Recipe + Full March 2026 Meal Plan
Here’s the main course you’ve been waiting for: perfectly cooked Beef Tenderloin paired with a rich, fruity Merlot-Lingonberry Sauce.
Beef Tenderloin with Merlot-Lingonberry Sauce (Serves 4)
Ingredients:
4 beef tenderloin filets (or 1 whole tenderloin, trimmed & portioned)
2 tbsp butter (plus 1 tbsp for sauce)
2 fresh thyme sprigs
1 fresh rosemary sprig
2 garlic cloves, minced
Salt & cracked black pepper
Merlot-Lingonberry Sauce:
6 oz lingonberry jam
1 tbsp Better Than Beef Bouillon
3/4 cup water
1 tbsp butter
1/4 tsp fresh thyme
Instructions:
Beef Tenderloin:
Sous-vide method: Place filets in a vacuum seal bag with butter, thyme, rosemary, and garlic. Seal and cook at 135°F for 1–2 hours.
Alternative: Marinate filets in same mixture and grill/sear to desired doneness.
Remove from bag, pat dry, and quickly sear on a hot grill or skillet.
Merlot-Lingonberry Sauce:
Melt 1 tbsp butter in a saucepan until just beginning to brown.
Add Better Than Beef Bouillon, lingonberry jam, water, and 1/4 tsp thyme.
Simmer until desired syrupy consistency. Taste and adjust jam or water if needed.
Serve: Plate beef filets and drizzle sauce generously over top.
