My Favorite Outdoor Activity? Going Back Inside.

They say if you can’t stand the heat, get out of the kitchen. Well, in July, I say if you can’t stand the heat, get back into the air conditioning.

There’s a persistent myth that to be a "summer hosting pro," you have to spend your entire Saturday hovering over a 500°F grill while the July humidity does unspeakable things to your hair. After many years of recipe development, I’m here to tell you: My favorite outdoor activity is officially going back inside.

Being an "Elegant Meals Made Simple" creator doesn't mean you have to suffer for your art. In fact, some of the most sophisticated meals are the ones that allow the host to stay crisp, cool, and collected.

If you see me sprinting from the patio back to the kitchen, I’m not just "forgetting the tongs" (though that happens too). I am retreating to my sanctuary of cool air. Here is how I manage to host a "patio party" without actually melting into the patio:

1. The "Prep Indoors, Flash-Fry Outdoors" Method I do 90% of my work in the AC. I’ll prep my almond-crusted chicken or chill my ceviche in the kitchen. When it’s time to eat, I head outside for a grand total of five minutes to do a quick flash-fry in beef tallow or a high-heat sear. Then? Back to the AC.

2. The Hydration Station is My Best Friend While the guests are enjoying the "Ice with Style" cubes in the garden, I may keep my own stash of botanical-infused water right next to my indoor prep station.

3. The Charcuterie "Save" This is why my Charcuterie Boardand Handheld Sandwiches books are my July bibles. You can assemble a world-class, gourmet spread on your kitchen island where it’s 72°F, then simply carry the finished masterpiece outside when everyone is ready to eat.

The Takeaway

Don't feel guilty for hating the heat. Real culinary wisdom is knowing that a stressed, sweaty host makes for a stressed party. This July, embrace the "Inside-Outside" flow. Do the work where it’s cool, serve it where it’s pretty, and never feel bad about retreating to the living room for a "breather."
