The Humble Artichoke, Elevated
I’ve always had a soft spot for artichokes. They feel a bit like a treasure hunt—you have to work a little to get to the heart, but the reward is always worth it. My mother loved artichokes so it was a staple in our house. She used to say “when you pick just the right one, it’s got such a nutty flavor.”
When I tried a stuffed artichoke for the first time, I loved it! I have tweaked this recipe multiple times, probably because I love butter and garlic and you can never get enough of either! Our Grilled & Stuffed Artichokes bring a smoky, buttery element to the August menu that feels both rustic and refined.
The key to a great artichoke dish starts at the market. I like to spend a few extra minutes picking out the perfect ones. You want them to feel heavy and firm in your hand—if they give a little "squeak" when you squeeze the leaves, you know they are fresh and full of moisture. Look for tight, compact leaves and a vibrant green color.
Once home, we steam them until tender before letting them hit the grill. That slight char, combined with our garlic butter parmesan crumbs, turns a simple vegetable into a show-stopping side dish. It’s the kind of food that encourages you to eat with your hands and enjoy the process.
