Roasted Broccoli with Garlic & Cheddar Seasoning
If you think broccoli is just a "filler" on the plate, this recipe is here to change your mind. In June, we want our vegetables to be vibrant and full of texture. By roasting at a high heat, we transform humble broccoli into something crispy, savory, and completely addictive.
Why Roasting is a Game Changer
Most people make the mistake of steaming or boiling, which can lead to a soggy result. Roasting at the right temperature creates caramelization. Those slightly charred, "lacy" edges on the florets are where the flavor lives.
The Flavor Profile:
The Base: Fresh broccoli crowns, tossed in high-quality olive oil.
The Punch: Freshly minced garlic that mellows and sweetens in the oven.
The Finish: A dusting of sharp cheddar seasoning. It adds a savory, salty crust that clings to the roasted florets without the need for a heavy, weighed-down cheese sauce. I personally swear by this Cheddar Seasoning for that perfect, sharp kick!
Pro Tips for the Perfect Roast
The "Space" Rule: I can't stress this enough—don't crowd your baking sheet! If the broccoli is piled on top of itself, it will release steam and get mushy. Give every floret its own "personal space" (who doesn’t like personal space?) so the hot air can circulate and crisp those edges.
The Stem Secret: Don't throw away the stems! Peel the woody outer layer, slice the tender centers into rounds, and roast them right along with the florets. They get a wonderful, buttery texture.
High Heat: Don't be afraid of the heat. We want a hot oven (around 425°F) to ensure the broccoli cooks through just as the tips start to turn golden brown.
Hostess Hack: To save yourself time during the "dinner rush," you can wash and cut your broccoli florets the morning of. Just make sure they are completely dry before you toss them with the oil and my favorite Cheddar Seasoning to ensure maximum crunch!
