A Labor of Love 💜– Pasta-Crusted Salmon
Now, I’ll let you in on a little secret: I have never been the biggest fan of salmon. But Ken? It is absolutely one of his favorite meals. In our house, cooking is often a way of saying "I love you," so this dish is something I like to bring to our table. While I often trade out the salmon for a different protein for myself, watching how much he enjoys the unique crunch of the pasta crust makes every minute in the kitchen worth it. This recipe was inspired by a restaurant that has since closed in Kansas City. I was able to to create this recipe solely based on what Ken described and of course the presentation I saw when he enjoyed it there.
The Pasta-Crusted Salmon is truly the heart of this month’s menu. We create a delicate "dust" from pasta and panko to give the fish a crisp, golden exterior that protects the tender meat inside. But the real star is the Roasted Tomato Cream Sauce. Oh my goodness, I love this sauce! I used it on other pasta dishes as well.
This sauce brings such a beautiful warmth and elegance to the table. By roasting the tomatoes first, you unlock a deep, concentrated sweetness. (Ok sometimes I buy the store bought roasted tomatoes too🥫.)
I blend the tomatoes until silky but leave just enough texture to keep it feeling rustic. Swirled over a bed of angel hair pasta, it’s a meal that nourishes the soul as much as the body.
