There is something so therapeutic about whipping ricotta. As you blend it with a hint of lemon zest and high-quality oil, it transforms from a humble cheese into something cloud-like and luxuriously spreadable. A Little Kitchen Secret: To make your evening as breezy as the August air, whip your ricotta and chop the pistachios earlier in the day. Keeping these components ready in the fridge means that when your friends arrive, all you have to do is toast the bread and assemble.
