The Feature: Baked Halibut with Coconut Jalapeño Lime Sauce
Halibut is often called the "steak of the sea" for a reason. It is meaty, white, and flaky, with a mild flavor that acts as the perfect canvas for our coastal-inspired sauce.
The sauce is where the true allure lies. It’s a velvety, dairy-free reduction of coconut milk and lime, infused with the bright aroma of fresh jalapeño. Important note: This isn't a "spicy" dish unless you want it to be! By removing the seeds and ribs of the jalapeño, you get a beautiful, garden-fresh pepper flavor without the sharp heat. It’s sophisticated, tropical, and looks stunning when drizzled over the pearl-white fish.
Shopping Tips for Success
To ensure your main course is resort-quality, keep these tips in mind:
The Fish: Fresh halibut should be translucent and firm. If it looks "chalky" or purely white before it’s cooked, it may not be at its peak freshness. If halibut isn't available at your local market, Sea Bass or high-quality Cod are excellent coastal substitutes.
The Coconut Milk: Use full-fat canned coconut milk. The "light" version or the cartons found in the dairy aisle won't provide that rich, velvety consistency that makes this dish feel truly indulgent.
The Aromatics: When picking your jalapeño, look for smooth skin. The ones with "stretch marks" (small white lines) tend to be spicier. For this mild, fragrant sauce, a smooth, bright green pepper is your best bet.

The Sauce: You can blend and simmer the sauce the morning of. Store it in the fridge and gently reheat it on the stove while the fish bakes.
The Prep: Pat your halibut fillets completely dry and season them an hour ahead of time. Keeping the surface of the fish dry is the secret to achieving that perfect, flaky texture in the oven.
